Made with pumpkin purée, rolled oats, warm spices, and a shot of espresso brewed with our Mexico coffee — a medium roast, fair trade, organic coffee — these bites offer the perfect balance of natural sweetness and sustained energy. Easy to make and completely no-bake, they’re ideal as a snack, dessert, or on-the-go treat.
Ingredients for the Pumpkin Spice Energy Bites
The star ingredient: Espresso made with our Mexico coffee
Our Mexico coffee is a medium roast, fair trade, and organic coffee with smooth chocolate and nutty notes — a delicious way to add depth to your coffee recipes and no-bake energy bites.
- 1 ¾ cups rolled oats
- ⅓ cup pumpkin purée
- 3 tbsp maple syrup
- 3 tbsp peanut butter (or almond butter or soy butter)
- ¼ cup pecans
- ¼ cup pumpkin seeds
- 1 espresso, prepared with our Mexico coffee
- Cinnamon, nutmeg, and ginger (to taste)
- ⅓ cup dark chocolate chips
- Optional: dark chocolate coating, chopped pecans, and sea salt
Instructions: How to make no-bake pumpkin energy bites
- Add all ingredients to a blender and mix until the texture is sticky but still slightly coarse.
- Roll into about 15 energy bites.
- Optional: Dip in melted dark chocolate, then top with chopped pecans and a pinch of sea salt.
- Refrigerate for 30 minutes before enjoying.
