- Apple and coffee crumble -

  • 250g brown sugar
  • 250g unsalted butter
  • 300g flour
  • 50ml short double espresso Casa (Available at Metro)

  1. Combine the brown sugar, flour, eggs, espresso, zest and vanilla. Melt the butter and incorporate it into the preparation. Mix and place the dough in a madeleines mold.

  • 300g (2 cups) unbleached all-purpose flour
  • 35g (¼ cup) cornstarch
  • 2.5 ml (½ tsp) baking powder
  • 1ml (¼ teaspoon) of baking soda

  • 2 eggs
  • 300g (2 cups) brown sugar
  • 60 ml (¼ cup) La Crema coffee
  • 250 ml (1 cup) of milk


  1. In a bowl, combine the flour, cornstarch, baking powder, baking soda and salt.
  2. In another bowl, whisk the eggs and brown sugar for a few minutes until incorporated. Gradually add the coffee while whisking. Using a spatula, stir in the dry ingredients alternately with the milk until well combined.
