Ingredients

  • 120 ml freshly brewed Sustain espresso
  • 180 ml (¾ cup) sifted unbleached all-purpose flour
  • 60 ml (¼ cup) sifted cocoa powder
  • 1 ml (¼ tsp) salt
  • 170 g (6 oz) semi-sweet chocolate, chopped
  • 180 ml (¾ cup) unsalted butter, cubed
  • 250 ml (1 cup) sugar
  • 3 eggs


Preheat your oven to 170°C (325°F) and position the rack in the center. Line the bottom of an 8-inch (20 cm) square pan with a strip of parchment paper, leaving an overhang for easy lifting, and grease the two remaining sides.

In a bowl, whisk together the flour, cocoa powder, and salt. Set aside.

Melt the chocolate and butter using a double boiler, then remove from heat and whisk in the sugar and espresso. Add the eggs one at a time, beating for 2 minutes, then gently fold in the dry ingredients with a wooden spoon.

Pour the batter into the prepared pan and bake for 25 to 30 minutes, until the center is just set but still slightly fudgy. Let cool in the pan for 4 hours before removing and cutting into squares.
