Poor Man’s Pudding 

Here’s a little sweet indulgence that will definitely please maple syrup lovers! Pair it with an espresso coffee for a unique tasting experience that stands out from the crowd.


Ingredients

Batter:

  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tbsp baking powder
  • 1 cup milk
  • 1/3 cup Coureur des bois maple liqueur

Creamy Maple Sauce:

  • 1 cup maple syrup
  • 1/2 cup Coureur des bois maple liqueur
  • 1 1/2 cups brown sugar
  • 1 1/2 cups 35% cream
  • 1/3 cup butter

Preparation

Batter:

  1. Using an electric mixer, beat the butter and sugar in a large bowl until light and fluffy. Add the eggs and vanilla and beat again until well combined. In a separate bowl, combine the flour and baking powder. Gradually add the dry ingredients to the butter mixture, alternating with the milk and the Coureur des bois liqueur. Mix until you have a smooth, homogenous batter. Pour into a 13 x 9-inch (33 x 23 cm) glass baking dish.

Maple Sauce:

  1. In a large saucepan, bring all the  creamy maple sauce ingredients to a boil, stirring constantly. Reduce the heat and simmer for about 3 minutes, or until the sauce thickens slightly. While the sauce is still hot, carefully ladle it over the batter.

  2. Bake in a preheated oven at 325°F (160°C) for about 35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
