Montecristo Recipe for Holiday Brunch by @folksandforks

Ingredients
- 6 slices of white country bread
- 1/4 cup crème fraîche
- 2 tsp whole-grain mustard
- 1 tsp Dijon mustard
- 8 slices rosemary ham (or other)
- 4 slices Gruyère cheese
- 1/2 cup grated Emmental cheese
- 2 eggs, beaten
- 1/4 cup milk
- 1 tbsp butter
- 1 tbsp vegetable oil
Steps

Mix the cream with the mustards.

For each Montecristo:
Spread one slice of bread with the mustard cream. -
Place 2 slices of ham, one slice of Gruyère, and a bit of grated Emmental on top.

Add another slice of bread spread with the mustard cream on both sides, followed by another layer of 2 slices of ham, Gruyère, and Emmental. Finish with a final slice of bread spread with the mustard cream.

Press down firmly on the sandwich to compress it.

Beat the eggs with the milk.

When ready to cook:
Dip the sandwich on all sides into the egg mixture. -
In a skillet over medium-low heat, melt the butter with the oil. Cook the sandwich on all sides, applying pressure with a spatula. Cook until golden brown and the cheese is fully melted.

Serve immediately with maple syrup.
