Recreate mom's tasty banana bread… with fair trade products that encourage producers at the source!

Celebrate both Mother's Day and FairTrade Month with this classic recipe modified for the occasion.

Ingredients

-1 1/2 cup all-purpose flour

-1 tsp baking powder

-1 tsp baking soda

-1 ¼ cup ripe bananas mashed with a fork (3 to 4 bananas)

-1/2 cup brewed coffee (a long espresso is ideal)

You can opt for our organic and fair trade decaffeinated coffee or otherwise, we recommend a strong coffee, like our Sumatra, for a stronger taste!

-1/2 cup softened butter

-1 cup sugar

-1 egg

-1 tsp vanilla extract

-2/3 cup THEOBROMA® chocolate in chunks

 

Preparation

  1. Put the grill at the center of the oven. Preheat the oven to 180 ° C (350 °F). Butter a 23 x 13-cm (9 x 5-inch) loaf pan with a 6-cup capacity.
  2. In a first bowl, combine the flour, baking powder and baking soda.
  3. In a second bowl, combine the bananas and coffee.
  4. In a third bowl, cream the butter and sugar with an electric mixer. Add the egg and vanilla and mix until combined. At low speed, add the 1st and 2nd bowls alternately to the 3rd.
  5. Add the THEOBROMA® chocolate chunks. Mix gently with a wooden spoon. Distribute the dough in the mold.
  6. Bake in preheated oven for 1 hour or until a toothpick inserted in the center of the dough comes out clean.
  7. For best results, let cool before unmoulding and slicing.
